Nourishing Family Winter Recipes:
Medicinal Marshmallows:
Tools needed:
Stand mixer or high power hand mixer
9x9 baking pan
Parchment paper
Ingredients:
¼ c. marshmallow root
1.5 c. filtered water
1 c. maple syrup (or honey)
3 tbsp. Grass-fed beef gelatin
Pinch of salt
Vanilla bean extract (to taste)
½ c. arrowroot/ corn starch
Steps:
Make marshmallow root infusion by soaking marshmallows in water overnight or up to 24 hours until it is *thicc*
Strain infusion
Add 3 tbsp. gelatin to ½ cup of marshmallow infusion in the bowl of stand mixer and give a quick mix then let it rest to allow the gelatin to “bloom”
Add another ½ cup infusion to a pot with maple syrup & salt. Bring to a boil and then let boil for about 5 minutes until mixture becomes frothy and ~230-240*F. (If you don’t have a thermometer and you want to be sure it is ready, drop a small amount of mixture into a small bowl of cold water using a clean spoon and if it forms a soft ball that squishes easily, it’s ready.
Once mixture is ready, slowly pour hot mixture into the bowl with gelatin & mix on medium-high.
This is a great time to add your vanilla bean extract (or peppermint, or whatever you fancy)
While the marshmallows are mixing, prepare your 9x9 baking pan with parchment paper and sprinkle arrowroot/ cornstarch all over.
Once the mixture doubles (or sometimes triples!), becomes fluffy & white and holds soft peaks - like marshmallow fluff (~ 10 mins) immediately pour into the prepared pan and smooth top out. Beware, this set’s quickly so be ready!
Allow to harden for a few hours on the table or in the fridge.
Elderberry Cough/ Immune-boosting Syrup:
Ingredients:
½ c. dried elderberries
4 c. water
2 tbsp echinacea
2 tsp. cinnamon powder
1 tsp. clove
2 tsp. dried cherry bark
1 tbsp. Brandy
½ c. - 2 cups honey (to taste)
Optional add-ins for additional benefits:
1 c. mullein, elderflower, slippery elm, cleavers, calendula, lemon balm
Process:
Boil all herbs in water on a slow simmer until ½ liquid has been evaporated (~10 mins)
Add brandy & any additional tinctures (if using) & wait until it has cooled enough to work with
Drain through cheesecloth and coriander.
Add ½ c. + honey (to taste)
Bottle and refrigerate for up to 3 months.
Kid-Approved Winter Tea:
Relaxing herbal blend (whatever you desire, we enjoy chamomile, lemon balm, mint & mullein…)
Dried orange slices. We’ve also added apple slices and it was equally delicious!
